Mashed Potato Balls
4 white potatoes
2 sweet potatoes (preferably the yellow ones, not the overly sweet orange ones, or yams if you can get them)
1/2 cup fat free milk
1 tbl garlic flakes (or use fresh)
1/2 cup soy cheese, your choice, shredded
2 tbl greek yogurt
salt and pepper to taste
Peel and cube the potatoes, boil until tender, remove, drain. In a mixing bowl combine the remaining ingredients. The amount of liquid you will need may not match the amounts above, add the milk a bit of at a time. Mash everything together, you want a result a bit thicker then normal mashed potatoes. Preheat the broiler, spray a large cookie sheet type pan with spray oil. Roll the potatos into balls like large meatballs, line up on cookie sheet. Put under broiler for a couple minutes to brown the surface, serve.
