Chilli and Ginger chicken


Chilli and Ginger chicken

This recipe was for my slow cooker but I am sure you could adapt it

low fat spray
4 chicken portions
1 onion, chopped
2 celery sticks, chopped
150 ml chicken stock
450g pineapple chunks in juice
10 ml chilli powder (2 tabs)
few drops Tabasco sauce
2.5 ml ground ginger (half teaspoon)
salt and freshly ground pepper

Preheat cooker on high
Brown chicken pieces in spray fat
transfer to cooker
add onion and celery to pan and fry until transparent
(stir in flour)
Gradually add stock, pineapple, juice and rest of ingredients. Bring to boil, stirring continuously. Pour over chicken
Cook on Low for 5-8 hours (?1 and half hours Gas mark 5)
