Scampi and Chips

Serves 4
400g Potatoes, scrubbed and cut into wedges
Fry Light
Pinch Salt and Pepper
450g Large Peeled Prawns
1 Egg
75g Polenta
1 tsp Dried Mixed Herbs
1. Preheat oven to 200 / gas mark 6
2. Put potatoes into a roasting pan. Coat with cooking spray. Season with Salt and Pepper. Roast for 30 minutes.
3. Pat prawns dry with kitchen paper. Beat egg with 2 tbsp cold water.
4. Sprinkle polenta onto a plate and mix with dried herbs and seasonings.
5. Dip prawns in beaten egg, and then roll in polenta mixture.
6. Place on a non stick baking sheet and bake in oven with potato wedges for a further 10 minutes.
