Tuscan Salad
Serves 4
Core recipe
Dressing:
1 tsp
wholegrain mustard
2 tbsp olive
oil
4 tbsp
balsamic vinegar
2-3 garlic
cloves, crushed
2 tbsp fresh
tarragon chopped
2 tbsp fresh
parsley chopped
Salad:
400g can
haricot beans, drained & rinsed
400g can
kidney beans, drained & rinsed
1 red onion,
finely chopped
2 tbsp pitted
green olives (in brine, drained)
4 tomatoes,
chopped
1 avocado,
peeled, stoned and cubed
370g can tuna
in brine, drained & lightly flaked.
Mix dressing
ingredients, season well and set aside.
In a large
bowl, combine all the salad ingredients, pour over dressing and toss well.
