Chickpea,
Coriander & Lime Salad

500g cooked
chick peas or use 2 x 400g cans, drained & rinsed
1 red onion,
thinly sliced
1 red pepper,
finely chopped
2 tbsp fresh
coriander, chopped
2 garlic
cloves, crushed
2 tbsp olive
oil
juice of 1 lime
Combine chick
peas with onion, pepper and coriander.
In a screw
top jar, mix the garlic, oil and lime juice. Pour over salad, mix and
chill well.
