Spicy Potato, Green Bean & Chickpeas


Spicy Potato, Green Bean & Chickpeas

Serves 4

Points 3 per serving
Core recipe

450g new potatoes
200g french beans trimmed
1 tbsp olive oil
1 tsp cumin seeds
½ tsp mustard seeds
½ tsp cardamom seeds
200g 0% greek yogurt
2 garlic cloves, crushed
1 x 400g can chickpeas, drained
2 tsp garam masala
2 tbsp chopped fresh coriander

Cook the potatoes in salted water for 5-10 mins until almost cooked, add the french beans and cook for a further 3 mins. Drain & refresh under cold water.

Heat the oil and add the cumin, mustard and cardamom seeds and fry a few seconds, stirring.  Add yogurt and garlic and cook gently for 2 mins.  Add potatoes, beans, chickpeas & garam masala.  Toss together, season to taste and serve sprinkled with fresh coriander.
