Prawn Salad

2 garlic
cloves, peeled & crushed
1 tbsp white
wine vinegar
1 tbsp olive
oil
Salad
1 avocado
(160g) peeled, stoned & finely chopped
2 tsp lemon
juice
4 tomatoes,
deseeded & finely chopped
300g cooked
prawns
3 nectarines,
cut into slices
Mix dressing
ingredients together and set aside.
Mix avocado
with the lemon juice. Add tomatoes, prawns and nectarines. Mix
well. Serve on a bed of lettuce, drizzled with the dressing.
