Strawberry
& Carrot Salad
A
sweet-savoury combination.

6 large
carrots, peeled
200g
strawberries, sliced
2 tbsp olive
oil
squeeze lemon
juice
1 tbsp
chopped fresh mint
Using a
swivel peeler, peel long thin ribbons of carrot. Put the carrot ribbons
and strawberries into a large bowl.
Whisk olive
oil, lemon juice and mint. Season with plenty of freshly ground black
pepper.
Toss
strawberries and carrots with the dressing and serve.
