ITALIAN TUNA & BEAN SALAD


ITALIAN TUNA & BEAN SALAD

Serves 4
Points per serving 3

3 tbsp lemon juice
2 tbsp tomato puree
2 x 200g cans tuna in brine or water, drained
1 x 400g can cannelini beans, rinsed & drained
1 red onion, finely chopped
3 tomatoes, chopped
salt & pepper
basil leaves, torn to shreds

Mix lemon juice & tomato puree in a large bowl.  Flake tuna and add to the bowl with the beans, onion and tomatoes.  season and mix gently.
Pile onto serving plates and scatter basil leaves on top.
