Smoked Cod
and Orange Salad

176g smoked
cod fillet
4 oranges,
peeled and sliced
1 red onion,
finely sliced
1 galric
clove, crushed
1 tbsp olive
oil
1 tbsp red
wine vinegar
few chilli
flakes
25g pitted
black olives in brine, drained and chopped
sea salt
& black pepper
Grill the cod
for 15 mins, cook and then flake into small pieces. Toss the orange
slices with the onion and then fold in the ocd.
Combine olive
oil, garlic and vinegar. Drizzle over the cod mixture and add the chilli
flakes. Top with the olives and serve.
