Papaya Salad
with Seared Beef

2 papaya, the
firmer and greener the better
1 cucumber
125g
beansprouts
5cm (2")
piece fresh ginger, finely chopped
1 clove
garlic, finely chopped
bunch
coriander, chopped
1 red chilli,
finely chopped
2 limes, juice
squeezed from 1, the other cut into wedges
1 tsp olive
oil
375g lean
sirloin steak
freshly
ground black pepper
sea salt
Peel papayas,
cut in half and scoop out all the seeds. Slice and cut into equal sized,
large matchsticks, place in a large bowl.
Cut cucumber
in half ,lengthways, scoop out seeds and then slice into large matchsticks. Add
to the bowl with the beansprouts.
Add the
ginger, garlic, chilli, coriander and ime juice to the bowl with the seasoning
and evenly mix.
Heat oil in a
frying pan and when smoking hot, add the steaks and cook for 1 min each side
for rare or 2 min each side for medium. Remove from pan and leave to rest
for 1 min.
Divide the
salad between 4 plates. Using a very sharp knife, thinly slice the steak
and arrange over the salad. Serve with lime wedges.
