Hot Tuna
Frylight
1 small onion, chopped finely
125g mushrooms, sliced
1-2 teaspoons hot Chilli powder, or to taste
1 teaspoon cumin
1 teaspoon mixed dried herbs
400g can of chopped tomatoes
200g can of tuna in water, drained
420g can of kidney beans in water, drained
198g can of Sweetcorn, drained
salt and freshly ground black pepper
Gently cook the onion and mushrooms for 3-4 minutes with Frylight.
Stir in the Chilli powder, cumin and herbs.
Add the remaining ingredients and season to taste.
Bring to the boil, cover and simmer for 15-20 minutes.
