Couscous cake


Couscous cake

No Count

113g couscous
1 egg white
1 tub mullerlight toffee
5tsp sweetener
Few drops vanilla essence
150ml boiling water

1. Pour the boiling water over the couscous and leave it to sit until the water is
completely absorbed.
2. Meanwhile mix all other ingredients well and the mix into the couscous.
3. Pour into a cake tin that's been sprayed with fry light and bake at 180 degrees
for 20 minutes until firm to the touch.

Suggestions
you could have it warm or cold with a dollop of sweetened fat free yogurt/ or vanilla yogurt.

PINEAPPLE UPSIDE DOWN CAKE
I just line a cake tin (I have one of those non-stick sheets which are great) and arrange drained, tinned pineapple rings (in juice) on the bottom, I usually put pitted cherries or blueberries in the holes. Pour over the cake mixture and bake as for the cake.

STEAMED FRUIT PUDDING
stew some fruit -e.g. rhubarb, gooseberries, apple, apple & blackberry with sweetener and put in the bottom of a glass or plastic pudding dish cover with cake mixture and cook in microwave for about 5 mins until firm. This is absolutely lovely and just like an old fashioned steamed pudding.

RHUBARB PUDDING
put a slice of the infamous couscous cake in a pudding bowl, stewed some rhubarb with sweetener poured it over the cake while hot and topped with vanilla yogurt - believe me it was LOVELY , tasted like a dish of rhubarb dumpling and custard.... I'll be doing that again!!!!!

Lemon Drizzle Cakes

100g cous cous
1 egg white
1 lemon cheesecake muller light
few drops vanilla essense
5 tblsp sweetner
Lots of drops of Jif lemon
Grated lemon peel

Pour boiling water over cous cous, mix rest of ingredients together and then add cous cous. Bake in cake tray for 15 mins on 180 - they are YUMMY!! So tangy and refreshing!

No Count Raspberry & Cranberry Muffins

120g couscous
1 Raspberry & Cranberry Muller Light yoghurt
5 tblspoons splenda
1 egg white
few dashes vanilla essense
Large handful Red Currants
Large handful blueberries

Make up the cous cous as normal and add the rest of the ingredients, pop into a cake baking tray and pop in the oven for 15 mins at 180! They are so delish!! 

You could also make a savoury version; just skip the sweetener and yogurt and season with salt and pepper, cottage cheese, peppers, sweet corn, anything really with a nice green salad

Couscous Eve’s Pudding

 

Take 2 Bramley apples and stew them with a little diet lemonade.  sweeten to your taste.  Put the stewed apple in the bottom of a casserole dish.

Top with the couscous cake mixture as recipe below and bake in the oven for approx 25-30 mins until golden.  Gas 5

COUSCOUS CAKE

 

4.5 Sins for the lot on Green

4oz cous cous to that add quarter pint of boiling water and let it stand for
about 5 mins to absorb water.
Dont leave too long at this stage as I think this is what makes it go rubbery.
Add 2 eggs and 2 tbsp lemon curd and rind and juice of a lemon.
Beat all that together, cook for 20mins don't leave too long in the oven either
or you can cook in the microwave for about 5 mins.
When cool mix 4 oz quark with 1 tablespoon of lemon curd and a sweetener if
you need it and spread on top.

Variation;

I have also wondered about making it with
almond flavouring in the cake and topping with low sugar jam and quark. (like
bakewell tart) or adding dried mixed spice and a little dried fruit, like a hot x
bun, or coffee and a toffee or vanilla mullerlight. or banana mashed in

instead of one of the eggs and maybe some chopped dried apricots or fresh??
