Lentil & Lemon Soup

Lentil & Lemon Soup  

No Count

1 onion, chopped
1 clove, garlic, crushed
150g lentils
570 ml stock
1 x 400g tin chopped tomatoes
2 tsp tomato puree
2 tbsp fresh chopped thyme ( or 2 tsp dried)
salt & pepper
juice of ½ lemon

Place all ingredients into a large pan.  Bring to the boil and simmer until the lentils are soft.  Puree or blend if you want.


Season to taste and serve
