Sweet & Sour King Prawn Curry

Sweet & Sour King Prawn Curry

A hot & spicy curry.

Serves 4

Points plan 3½ pts per serving
Core plan 1 pt the whole recipe

Sauce:
3 tbsp tomato ketchup
1 tsp Tabasco
1 tsp Worcestershire sauce
½ tsp chilli powder
1 tsp demerara sugar
1 tsp salt
1 tbsp chopped fresh coriander

Curry:
600g raw king prawns, defrosted & shelled
2 tbsp olive oil
½ tsp mustard seeds
2 green chillies, deseeded and roughly diced
2 carrots, cut into batons
2 courgettes cut into batons
125g frozen peas
4 spring onions, roughly chopped

In a large bowl, mix all the sauce ingredients.  Add the prawns and mix to coat with the sauce.  Leave to marinate 1 hour.

Heat oil and mustard seeds in a large pan or wok until they start to pop.  Remove from the heat and add the chillies.  Return to the heat and add the prawn mixture.  Stir fry over medium heat for 3 mins.  Add carrots and courgettes and cook 2 mins.  Add peas and spring onions and cook 3 mins.


Serve with rice (not included in points)
