Mediterranean Baked Cod

Serves 4
Core recipe
Points plan 5 pts per serving

4 x 175g skinless, thick cod fillets
450g charlotte potatoes, cooked & sliced
100g black olives in brine, drained
250g Pomderino tomatoes
2 tbsp freshly chopped basil
2 tbsp olive oil

Preheat oven to Gas 5/190ºC/375ºF

Lay cod in a large ovenproof dish and season well.  Scatter over the potato slices, olives and tomatoes. Drizzle with the olive oil.


Bake in the centre of the oven for 25-30 mins.  Remove from oven and sprinkle with the basil.  Serve.


Mediterranean Cod

4 x 115g cod fillets, skinless
400g can chopped tomatoes, drained
25g black pitted olives, chopped
50g button mushrooms, chopped


Preheat oven to Gas 7/220ºC/425ºF

Place the cod fillers onto a non-stick baking sheet.

In a bowl mix the olives, tomatoes and mushrooms and spoon over the fish.  Season well and bake for 13 mins.

Serve with new potatoes & green veg.
