Chicken with Apple & Pear
Ratatouille
Serves 4
Points per serving: 3
2lb marrow, peeled, deseeded & coarsely chopped
1 onion, peeled and sliced
1 green pepper, deseeded and cut into strips
1 clove garlic, crushed
400g can chopped tomatoes
¼ pt (150ml) tomato juice
1 medium dessert apple, cored & sliced
1 dessert pear, peeled, cored & sliced
2 tbsp lemon juice
salt & pepper
1 tsp mixed dried herbs
1 tbsp fresh basil or parsley chopped
4 x skinless boneless chicken breasts, cooked
Put marrow, onion, green pepper, garlic, tomatoes and tomato
juice into a pan and bring to the boil. Simmer 30 mins. Meanwhile
dip the apple and pear slices in lemon juice to prevent discolouration.
Drain the slices and add to the pan with the herbs. Cook 5 mins, taste
and adjust seasoning. Serve with the chicken.
Note: Use pumpkin or squash instead of marrow if you
prefer. Also nice served with fish or other griiled meats.
