Chicken, Bacon & Leek Casserole

Chicken, Bacon & Leek Casserole

Serves 4
Core recipe

4 chicken breasts, trimmed and cubed
4 rashers lean bacon, any fat removed, cut into strips
2 onions, sliced
1 clove garlic, crushed
2-3 carrots, sliced
2-3 leeks, sliced
400g can chopped tomatoes
150ml chicken stock
seasoning
1-2 tsp dried mixed herbs


Place all ingredients into a large ovenproof casserole dish and mix thoroughly.  Place in oven 180Âșc, Gas 4 for approx 1½ hours  or until chicken is thoroughly cooked.


Serve with green vegetables.
