Speedy Turkey Meatballs

200g/7 oz mushrooms chopped roughly
salt and fresh ground black pepper
300ml (10floz) Chicken Stock
2 Wholewheat Crispbreads - crushed
500g (1lb 2oz) Turkey Mince
1 x 400g chopped tomatoes
Chop half the onion and fry in low fat cooking spray for 2 mins. Stir in the mushrooms, seasoning and 3 tablespoons of the stock, cover pan and cook for 2 minutes.

Chop half the onion and fry in low fat cooking spray for 2 mins. Stir in the mushrooms, seasoning and 3 tablespoons of the stock, cover pan and cook for 2 minutes.
Meanwhile, grate the second half of the onion into a bowl, add the crispbread
crumbs and moisten with 2 tablespoons of the stock. Add the turkey mince and
seasoning and shape into 20 meatballs.
Add the tomatoes and the rest of the stock to the onion and mushroom mixture.
Season and simmer the sauce for about 5 minutes.
Meanwhile, brown the meatballs in low fat cooking spray in a non stick frying
pan for 5 minutes turning to colour evenly. Add them to the sauce and simmer,
uncovered, for 15 minutes until cooked through.
