Pan Fried Halibut & Red Cabbage

Pan Fried Halibut & Red Cabbage

Serves 4

An unusual combination of fish and red cabbage but worth a try.

Core: 7 pts the whole recipe (wine/sugar/sultanas) (1½ per serving)

Points plan 23 pts the whole recipe 6 pts per serving

2 tbsp olive oil
1 red onion
1 clove garlic, finely chopped
400g red cabbage, finely shredded
3 tbsp red wine vinegar
400ml red wine
2 tbsp sultanas
3 tsp demerara sugar
4 x 200g halibut fillets
Balsamic vinegar to drizzle

Heat half the olive oil in a pan.  Add the onion, garlic and cabbage and cook over medium heat for 4 mins.  Add red wine vinegar and cook over high heat for 2 mins.  Add red wine, cook for 10 mins until reduced by half.  Turn down the heat to low, add the sultanas and sugar and cook for 40-50 mins.


Heat remaining olive oil in a frying pan and cook fish 3 mins each side.  Place cabbage on to a plate, top with the fish and drizzle with balsamic vinegar.  Serve
