Prawn & Harissa Couscous


Just to let you all know this is Core/ simply filling as well as being only 2 pts per serving!

Serves 2

100g couscous
A little spray oil
2 garlic cloves
200ml Chicken or veg stock
1 small onion
1 tsp ground cumin
400g Tin tomms
1-2tsp harrisa paste
150g raw prawns

put the couscous in a bowl & just cover with the boiling chicken stock - leave to swell for about 5 mins. spray oil pan & fry onion & garlic for a couple of mins then add the cumin & cook for a min or so. Add harissa & toms. season & leave to bubble for about 5 mins.

Add the prawns & cook for about 3 mins.

Serve with the couscous
