Italian Baked Fish Pie

Italian Baked Fish Pie

Serves 4
Core recipe

1 Onion
6fl oz/170ml Vegetable stock
Garlic to taste
1 dried chilli
1 tsp. dried Italian herbs
400g canned tomatoes
5oz/142g frozen peas
4 x 142g/5oz Cod or Haddock Steaks
1lb potatoes, peeled, cooked & mashed
2 tbsp. freshly chopped parsley

Pre heat the oven to 200c/400f/gas 6 Chop the onion, cook in a pan with the stock, and simmer for 5 minutes until the onion is tender and the stock has reduced.

Add the herbs, tomatoes, chopped chilli and crushed garlic to the pan and simmer for another 5 minutes until most of the tomato juice has reduced. Then add the peas.

Cut the fish into chunks and place in a shallow ovenproof dish and pour the tomato mixture over the fish.

Spoon the mashed potatoes over the fish and fluff with a fork.

Bake for 30 minutes until golden and serve with loads of veggies
