Spiced Fish with Couscous

Serves 1
Points plan 6½ per serving
Core recipe

50 g of couscous (dry weight)
2 tsp of olive oil
1 pinch of cumin
1 pinch or paprika
1 pinch of chilli powder
½ tbsp of lemon juice
1 fillet of white fish (around 150g)
5 cherry tomatoes
75 g of sweetcorn

Place the couscous in a heat-proof bowl and pour over enough water to cover. Set aside for 10 minutes.


Heat a tsp of the olive oil in a non-stick pan. Mix the spices into the lemon juice and add to the pan; add the fish and cook for 5 minutes or until the fish flakes easily. Drain off excess water from the couscous, stir in the other halved cherry tomatoes and sweetcorn and serve with the fish and a portion of vegetables.
