Quick Turkey Cottage Pie

Quick Turkey Cottage Pie

Serves 4

Freezing recommended

500g potatoes, peeled & cubed
4 tbsp hot skimmed milk
1 tbsp chopped fresh parsley or ¼ tsp ground nutmeg
500g pack turkey mince
low fat cooking spray
2 garlic cloves, crushed
½ tsp dried thyme, oregano or mixed herbs
4 spring onions, chopped
1 tbsp flour
500ml chicken stock
1 tbsp dried natural colour breadcrumbs
salt & pepper

Cook potatoes in lightly salted, boiling water for 10-12 mins until just tender.  Drain well and mash until smooth.. Beat in the hot milk, parsley or nutmeg and seasoning and then set aside.

Heat a large non-stick pan, add the mince and stir to break it up.  Spray with low fat cooking spray and cook until it becomes crumbly and starts to brown.

Add garlic, herbs and spring onions.  Cook 2 mins, sprinkle in the flour and mix in. Stir in the stock and raise the heat.  Simmer 10 mins until mixture has thickened and reduced down.  Season well.

Preheat grill, spoon mince into an ovenproof dish, spoon over potatoes, spreading evenly with a fork.  Sprinkle over the breadcrumbs.


Place dish under grill and cook until top turns golden.
