Baked Salmon With Potatoes & Olives

Serves 4

Points plan 7½ pts per serving

500g charlotte potatoes
2 tbsp olive oil
2 red onions, sliced
2 tbsp black olives, pitted & chopped
1 tbsp balsamic vinegar
4 x 150g salmon fillets
2 tbsp chopped fresh basil
50g rocket leaves

Place potatoes in a pan of cold water, bring to the boil & simmer for 15 mins or until just tender.  Drain and refresh under cold water. Cut into 1.3 cm (½") slices.  Set aside.

Preheat oven to Gas 6/200ºC/400ºF

Heat 1 tbsp oil and cook the onions for 10 mins or until softened.  Add olives and vinegar, season to taste.  Gently stir in potato slices and coat with the onions. Season well.

Spoon potato mixture into a shallow ovenproof dish.  Top with the salmon fillets.  Drizzle with 1 tbsp olive oil and press basil into the fillets.


Cook 15 mins, remove from oven, allow to cool slightly.  Arrange rocket on top of salmon before serving.
