Spicy Prawn & Tomato Pasta

Spicy Prawn & Tomato Pasta

Tasty chilli prawns & pasta, a perfect combination.  A speedy supper for times when time is tight.

Serves 4

Points plan 6½ pts per person

Core recipe

350g tagliatelle (or your choice of pasta) dry weight
1 tbsp olive oil
1 garlic clove
good pinch dried chilli flakes, or to taste
400gg cherry tomatoes, halved
1 tbsp tomato puree
2 x 200g packs cooked, peeled, tiger prawns, defrosted
2 tbsp chopped fresh parsley

Cook pasta according to pack instructions.

Heat oil and cool garlic and chillies for 1-2 mins. Add tomatoes, and puree then cook for 5 mins until the tomatoes have collapsed.  Stir in the prawns and gently heat through for 2-3 mins.


Drain pasta, add it to the tomatoes and prawns, season, scatter with parsley and serve.
