Armenian Lentil Broth

Armenian Lentil Broth

Serves 4
Points per serving ½
Points per recipe 2½
Freezing recommended

Frylight
1 medium onion, finely chopped
1 tsp curry powder
1 tsp paprika
2 med carrots, sliced
1 small turnip, chopped
900 ml veg stock
60 g lentils
salt & pepper

Heat a non-stick pan and spray with Frylight.  Cook the onion gently for about 3 mins until softened.  Stir in the curry powder and paprika.  Add the veg, stock and lentils.  Bring to the boil, cover and simmer for 20 mins.
Blend the soup until smooth, return to the pan and reheat gently.  Season to taste and serve.


Garnish with a spoon of yogurt and ¼ tsp poppy seeds if wished.
