Curried Aubergine Soup

Curried Aubergine Soup

1 onion, chopped
1 garlic clove, crushed
1 tbsp medium curry powder
1 aubergine, diced
225g carrots, diced
400g chopped tomatoes
850ml vegetable stock
seasoning
fresh coriander to garnish


Put everything bar the coriander and seasoning into pan, bring to boil, simmer for 25 minutes, till aubergine is very pulpy, cool, blend, check seasoning, serve with coriander to garnish.
