Broccoli & Sweetcorn Soup

Serves 4

2 large heads of broccoli
1 tin of sweetcorn (rinsed & drained)
2 vegetable stock cubes
2.5 pints of water
black pepper
Put water on to boil and add stock cubes. 

Chop broccoli heads including stalks and add to boiling stock, reduce heat and simmer until tender. 5-10 mins.

Add 2/3rds of sweetcorn and blend.

Return mix to saucepan add remaining sweetcorn and freshly ground black pepper, reheat gently and serve.
