Chicken & Sweetcorn Chowder
Serves 4 - its nice and chunky so feels like proper food when its cold for lunch. I take it in a flask to work.

Two cooked chicken breasts (or any leftovers)
2 leeks, ginely chopped
3 potatoes, cubed
frozen peas and sweetcorn
skimmed milk (about 3/4 litre)
Stock (about 1/4 litre)
Soften leeks in a bit of frylight with the lid on, add spuds, stock and milk, boil for about 20 mins till spuds are done, chuck in chopped chicken, sweetcorn and peas (and you could add other leftover veg, some herbs, or maybe some ham). Simmer 5 mins till veg is done. Season (lots of black pepper).
