Beef Cabbage Soup

Beef Cabbage Soup

Serves 6

2 x 1lb jars pickled beetroot, finely chopped, undrained
1 onion, chopped finely,
900ml beef stock or 900ml water & 2 beef oxo
400g red cabbage, shredded
400g diced potatoes
1 bay leaf

Put into a largepan and bring to the boil.  Simmer until the veg are tender.  Discard bay leaf.

Serve
