Sweet Potato & Orange Soup

Frylight
1 onion, chopped
500g sweet potatoes: 375g roughly chopped, 125g cut
into ½" dice
200g potatoes, chopped
2 tbsp freshly squeezed orange juice
700ml veg stock
½ tsp ground coriander
150ml milk
salt & pepper
Spray pan with frylight and cook onion for 5 mins
until it begins to soften. Add the roughly chopped sweet potatoes,
potatoes, orange juice, stock and coriander. Simmer, covered for 30
mins. Puree and then add the sweet potato dice and milk. Simmer for
15 mins. Serve
