Lamb & Guinness Soup

Lamb & Guinness Soup

This will cost you 1½pts the lot on no count

Serves 6

2 onions,chopped
275g lean lamb, chopped
1.2 litres stock
275ml Guinness
3 sticks celery, diced
3 carrots, diced
50g pearl barley, washed
110g red lentils, washed
450g potatoes, peeled & diced
mixed herbs to taste
salt & pepper

Spray a pan with frylight and cook the onions for about 5 mins until softening.  Add the lamb to the pan and cook for 5 mins until browning.  Now add the remaining ingredinets apart from the potatoes.  Bring to the boil and simmer gently, partially covered for 1 hour.  Add the potaotes and mixed herbs and simmer 10-15 mins until the potatoes are tender.


Adjust seasoning and serve
