Italian Cupboard Soup

Italian Cupboard Soup

Serves 4

2 boneless pork chops, cubed
1 x 400g. can chopped tomatoes, undrained
1 litre chicken stock
1 onion, finely chopped
1 15-oz. can cannellini beans, drained
8 oz. fresh spinach leaves, torn 


In a deep saucepan, brown the pork in a little spray oil; add all ingredients except spinach; bring to a boil, lower heat and simmer for 15 minutes; stir in torn spinach and cook for 2 more minutes.


Top servings with grated Parmesan cheese. (count points for this)
