Gazpacho

Gazpacho

Serves 2

½ pt for the whole recipe both plans

Put 575 ml passata into a food processor with ½ onion, roughly chopped, ½ yellow pepper, chopped and 1 tbsp garlic, finely chopped.


Blend and add 3 tbsp red wine vinegar.  Add 1 tbsp fresh white breadcrumbs and process until smooth.  Season and serve, garnished with about 2 tbsp chopped cucumber and a couple of ice cubes.
