Cherry Tomato & Basil Soup

Serves 2

Preheat oven to 200ºC/400ºF/gas 6

Place 1 small onion, roughly chopped, 450g cherry tomatoes and 2 peeled garlic cloves into a roasting tin and cook for 20 mins.


Blend until smooth and add to a pan with 425 ml hot veg stock.  Simmer for 5 mins, season ans add about 10 torn basil leaves.  Serve.
