Chilli Pumpkin Soup

450g peeled & diced pumpkin
4 carrots, chopped
1 onion, chopped
½ red chilli, chopped
900ml hot veg stock

Put pumpkin into a pan with carrots, onion and chilli.  Add stock, season and cook for 30 mins.

Blend soup until smooth and serve.
