Spicy Goulash Soup

Spray oil
1 lge onion,
chopped
2 garlic
cloves, crushed
1 red or
green pepper, deseeded & chopped
2 carrots,
chopped
1 tbsp
paprika
400g can
chopped tomatoes
1 tbsp tomato
puree
2 veg stock
cubes in 1 ¼ pts water (750ml)
salt &
pepper
chopped
parsley or coriander to garnish
Heat a large
pan & spray with oil. Add the onion, garlic, pepper and carrots &
cook stirring gently over med heat for 3-4 mins until softened. Add
paprika & stir well.
Add the
tomatoes, tomato puree & stock to the pan. Bring slowly to the boil,
then simmer gently without a lid until the veg are tender, about 25 mins.
Transfer half
to a blander or food processor & process until smooth. Return to the
pan with the unblended soup to give a chunky texture.
Reheat,
season to taste and serve, sprinkled with chopped parsley or coriander.
