Hot and Sour Soup with Prawns

Serves 4
Points per serving: ½ (FC)

1 veg or chicken stock cube dissolved in 1½ pts (900ml) hot water
2" (5cm) piece lemon grass, finely chopped
1 tbsp fish sauce
1 tbsp light soy sauce
few drops chilli sauce
½ tsp five spice seasoning
60g mushrooms, sliced
120g peeled prawns
4 tbsp lemon or lime juice
coriander leaves to garnish

Heat stock and stir in lemon grass, fish sauce and soy sauce.  Add chilli sauce, five spice and mushrooms.  Simmer for 2-3 minutes.  Add prawns.


Just before serving, stir in lemon or lime juice.  Ladle into bowls and garnish with coriander.
