Fruit cake

1 cup hot tea
500gm mixed dried fruit
1 cup sugar (3-4oz)
2 cups sr flour
1 egg
Soak
fruit and sugar in tea overnight. In the morning mix in the flour and egg.
Place in a 2lb loaf tin and bake on a low temperature for approx 1.5 - 2 hours
A
great sticky dark cake which can be utilized as a Xmas cake by adding cherries
nuts and sherry. But watch the added points!
