BAKED BLUEBERRY AND OAT BARS
Makes 10 portions
4 PP per portion or free on F & H
400g porridge oats
1½ teaspoon baking powder
½ teaspoon salt
180ml skimmed milk
2 eggs
100g apple sauce
4 tablespoon sweetener
½ punnet fresh blueberries OR 100g frozen
Zest of 1 lemon
1 teaspoon vanilla extract
1. Preheat oven to 200C/400F/Gas Mark 6.
2. Lightly grease a 20cm (8 in) square cake tin.
3. Combine all the wet ingredients and add to dry ingredients.
4. Pour into a prepared tin and bake for 35-45 min.
5. Cut into 10 portions.
6. Cool.
