F & H Plate Mince and Vegetable Pie
Serves 4

Thins - split
250g extra lean minced beef
1 onion, finely diced
1 large carrot, diced
1 tablespoonful frozen peas
1 tablespoonful frozen sweetcorn
Low fat spray
Salt and pepper to taste
1 tablespoon gravy granules
1 beaten egg
Spray a sauce pan with low fat spray, cook the onion for 3-4 minutes, then
increase the heat and add the mince and carrots.
Fry for a further 3-4 minutes until the beef has browned. Cover with water and
simmer for 15-20 minutes, add the peas and sweetcorn and cook for a further 5
minutes; add the gravy granules and stir until the sauce has thickened.
Allow mixture to cool.
Heat oven to 200C/fan 180C/gas 6.
Split the Thins and roll them slightly with a rolling pin. Line an 8” round pie
plate with half the Thins, using an egg wash with the beaten egg on overlapping
pieces.
Brush edge of pie with egg wash, fill with cool meat mixture and arrange
remaining Thins over the top – using egg wash again.
Brush top with egg wash and bake for 15 – 20 minutes until filling is piping
hot.
