PUMPKIN POT
2 leeks, thickly sliced and washed to remove any grit
8 rashers smoked bacon, chopped
350g/12oz pumpkin flesh, cut into chunks (or use butternut squash)
700ml/1 1/4 pints hot chicken stock
250g/9oz long grain rice
Toss the leeks, bacon and pumpkin or squash together in a large microwave bowl. Spray with fry light and cover the bowl with cling film or a plate. Pierce the cling film a couple of times then microwave on High for 5 mins.
Carefully remove the bowl from the microwave and uncover, watch out for steam. Tip in the rice and season with salt and pepper (I just used pepper as I find the bacon salty enough). Then pour in the stock and stir to mix. Cover the bowl wioth fresh cling film or the plate and microwave on high for 10 mins. Uncover and give it a stir, then microwave for 5 - 10 mins until the rice is cooked. Leave to stand for 5 mins before giving everything a final stir.
My microwave is 850 watts.
