Peaches & almond baked oats

125 g Porridge oats

2 tbsp Maple Syrup

3 med Egg, whole, raw, beaten

1 tsp Baking powder

440 g, 200 g for the recipe plus 240 g to serve 0% fat natural Greek yogurt

1/2 tsp Almond Extract

1 tsp Vanilla Extract

2 med, thickly sliced Peach


Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the porridge oats, maple syrup, eggs, baking powder, yogurt, almond extract and vanilla extract into a bowl and stir well to combine.

Tip the mixture into a 1-litre ovenproof dish and arrange 2 thickly sliced peaches over the top of the oat mixture, pressing each slice into the oats. Bake for 30 minutes, until golden, then serve with 240g 0% fat natural Greek yogurt.
