CHICKEN WITH RED PEPPER & PARSLEY CRUST
Serves 4
Points per serving 4
4 boneless, skinless chicken breasts
1 small red pepper, seeded
2 garlic cloves
handful of fresh parsley
2 tbsp olive oil
Preheat the oven to Gas 6/200ºC. Put the chicken
breasts in a roasting tin or shallow ovenproof dish. Season.
Roughly chop the red pepper, put into a food processor along
with the garlic and parsley and pulse a few times. Stir in the olive oil
and season. Spread this mixture over the chicken breasts.
Spoon 2 tbsp water into the base of the dish and roast the
chicken, uncovered for 25 mins. Serve.
