CHICKEN & BUTTERNUT SQUASH STIR-FRY
Serves 1
Points per serving 3½
Peel & chop 225g butternut squash, place in a bowl with
3 tbsp water and microwave for 3½ mins. Spray a squirt of Frylight into a
wol or non stick pan and add some soy sauce. Add 1 medium skinless
chicken breast, cubed plus a pinch of chilli flakes and ½ tsp crushed
garlic. Cook well, stirring all the time then add ½ red onion, sliced and
10 cashew nuts. Continue stirring then add the squash. Serve when
the chicken is cooked, with chilli sauce for dipping.
