THAI TURKEY WITH STIR-FRIED VEGETABLES

2 tbsp oyster sauce
2 tbsp light soy sauce
2 tsp muscovado sugar
1 red chilli, deseeded & finely sliced
2 garlic cloves, finely sliced
1 tbsp lime or lemon juice
480g stir-fry turkey strips
2 tbsp veg oil
480g stir fry vegetables
soy sauce & pepper
Mix oyster sauce, soy sauce, sugar, chilli, garlic and lime
or lemon juice in a non-metallic bowl. Add the turkey strips and marinate
for at least 30 mins.
Heat 1 tbsp oil in a wok and add the turkey
mixture. Cook over a medium high heat for 6 mins, stirring. Turn
the heat down low while you cook the veg.
Heat the remaining oil in a wok or pan and stir-fry the veg
for 3-4 mins until cooked and still crunchy. Season with pepper and soy
sauce and serve with the turkey.
