TURKEY, PEPPER & PASTA BAKE

225g minced turkey
1 small onion, chopped
1 garlic clove, crushed
1 small green or red pepper, deseeded & chopped
400g tin chopped tomatoes
100ml stock or water
85g pasta shapes
½ tsp dried oregano or marjoram
salt & pepper
25g half fat cheddar, grated
Preheat oven to Gas 4/180ºC/350ºF
Heat a non-stick pan until hot then dry fry the minced turkey,
stirring well for 7-8 mins or until cooked and crumbly.
Add the onion, garlic and pepper. Mix well, cover
and cook for 5 mins until the vegetables have softened.
Stir in the tomatoes, stock or water, pasta shapes, herbs
and seasoning. Bring to the boil and simmer for 2 mins.
Spoon into a small casserole dish. Cover and bake for
30 mins.
Uncover and serve hot, sprinkled with grated cheese.
