Lemon cake


Lemon cake

Made a lovely lemon cake - which seems to work out less than the lemon drizzle cake.

Packet of Greens low fat cake mix (16pts - made up)
Zest of 1 lemon
2 tbsps lemon juice

Mix zest of lemon with cake mix and make up sponge as directed, replacing 2 of the tbsps of water with lemon juice. Cook as directed on the box. I made it in one tin rather than two which meant that I did'nt have to put a filling in. (just cooked it slightly longer)
For a topping I mixed icing sugar with lemon juice and a bit of 0% greek yogurt to taste. But to be honest it was so light and fluffy it did'nt need the topping.
Made 8 slices @ 2 pts slice (without topping) - so easy to do - but did'nt last long enough !!
