Spiced Tomato & Vegetable Soup

Serves 4

1 onion, chopped
1 tbsp curry powder
1 x 240 g tin chick peas, drained & rinsed
225g french beans
2 x 400g tins chopped tomatoes
1-2 tsp mixed herbs
600ml hot veg stock

Dry fry 1 chopped onion until softened.  Add curry powder to taste. Add chick peas, french beans, tomatoes, mixed herbs, and veg stock.


Season & simmer for 15mins.  Blend half and return to the pan.  Serve.
